Natural History to open in Melbourne with chef Morgan McGlone at the helm
McGlone has collaborated with hospitality design duo Michael Delany and Jaimie Wirth (International Worldwide) on the new venue, which is set to open in Melbourne’s CBD in February 2018.
The venue will be split into two offerings: the 350-seat Natural History Bar and Grill, and a street front café, Natural History Café.
The Southern American-style menu will include steak tartare with fried oysters and tendon chips; an iced shrimp cocktail; and baked onion artichoke, and from the grill: pork chops with forgotten cabbage; octopus with almond romesco; or a 1kg T-bone, served with chickpea skillet rice, pumpkin wedge, labne and creamed spinach. Desserts include a peach cobbler, key lime pie, and the 401 baked New York-style cheesecake.
The drinks program will feature a selection of Australian produce with a strong focus on natural wines, as well as classic Australian, craft and non-pasteurised beers, and unique cocktails featuring lesser known spirits and liquors.
Natural History Café’s offering will include porchetta rolls, pastries and donuts, and coffee served at the shop front.
